Breakfast Tacos

Ingredients
Featured Clayton Farms Green:
- Arugula
- Microgreens (any variety)
- Corn tortillas
- Hummus - regular or any flavor
- Clayton Farms Arugula
- Eggs
- Black beans (a can or cooked black beans)
- Peppers
- Onions
- Sweet potatoes
- Cheese - any kind
Additional toppings:
- Avocado
- Salsa
- Clayton Farms Microgreens
Directions
For the filling:
- Chop all veggies.
- Cook the sweet potatoes, onion, and peppers until tender
- Add in the black beans and egg, cook until the eggs are done.
- Sprinkle cheese on top
Assemble the tacos:
- Warm the tortillas - either bake in the oven or microwave for 20-30 seconds
- Add hummus
- Add arugula
- Add the filling
- Top with any additional ingredients.
