Breakfast Tacos


Featured Clayton Farms Green:

  • Arugula
  • Microgreens (any variety)
  • Corn tortillas
  • Hummus - regular or any flavor
  • Clayton Farms Arugula
  • Eggs
  • Black beans (a can or cooked black beans)
  • Peppers
  • Onions
  • Sweet potatoes
  • Cheese - any kind

Additional toppings:

  • Avocado
  • Salsa
  • Clayton Farms Microgreens


For the filling:

  1. Chop all veggies.
  2. Cook the sweet potatoes, onion, and peppers until tender
  3. Add in the black beans and egg, cook until the eggs are done.
  4. Sprinkle cheese on top

Assemble the tacos:

  1. Warm the tortillas - either bake in the oven or microwave for 20-30 seconds
  2. Add hummus
  3. Add arugula
  4. Add the filling
  5. Top with any additional ingredients.
