Porkchop and Pomegranate Salad


Featured Clayton Farms Greens: Butterhead Lettuce, Bok Choy Microgreens, Sunflower Microgreens


  • 1/2 lb butterhead lettuce
  • 2 seasoned pork chops
  • 1/4 cup diakon radish
  • 1/2 cup cherry tomatoes
  • 1/2 cup pomegranate seeds
  • 1/2 cup bok choy microgreens
  • 1/2 cup sunflower microgreens


  • 1/4 cup white wine vinegar
  • 2 tablespoons Dijon mustard
  • salt and pepper
  • 3/4 cup extra virgin olive oil


  1. arrange salad ingredients on plates
  2. whisk dressing ingredients together in a separate bowl, and drizzle over salad, add to taste
