Porkchop and Pomegranate Salad

Ingredients
Featured Clayton Farms Greens: Butterhead Lettuce, Bok Choy Microgreens, Sunflower Microgreens
Salad:
- 1/2 lb butterhead lettuce
- 2 seasoned pork chops
- 1/4 cup diakon radish
- 1/2 cup cherry tomatoes
- 1/2 cup pomegranate seeds
- 1/2 cup bok choy microgreens
- 1/2 cup sunflower microgreens
Dressing:
- 1/4 cup white wine vinegar
- 2 tablespoons Dijon mustard
- salt and pepper
- 3/4 cup extra virgin olive oil
Directions
- arrange salad ingredients on plates
- whisk dressing ingredients together in a separate bowl, and drizzle over salad, add to taste
