Chicken Wrap


Featured Clayton Farms Greens:

  • Arugula
  • Radish and/ or Bok Choy Microgreens

Basil Arugula Pesto

  • ¾ cup extra virgin olive oil
  • 1 cup fresh basil leaves
  • 1 cup fresh arugula
  • ¾ cup grated Romano cheese 1/3 cup pine nuts
  • 2 garlic cloves
  • ½ teaspoon grated lemon peel
  • 2 Tablespoons lukewarm water

Chicken & Bread

  • Ciabatta Bread or sandwich wrap
  • 1 lb cooked and sliced Chicken Thighs (boneless/skinless)
  • Mayo (we recommend Kewpie)
  • Radish/Bok Choy Microgreens
  • Salted Tomato slices
  • Basil Arugula Pesto


Basil Arugula Pesto

  1. Place all ingredients in a processor
  2. Blend until a thick smooth paste forms.
  3. Season with salt and pepper to taste.


  1. Spread mayo on choice of bread and smear arugula pesto on top of the mayo.
  2. Place salted tomatoes and chicken on.
  3. Top your sandwich with your choice of either or both microgreens.
